Virginia Jensen
Virginia Jensen, 93, of Correll, Minnesota, passed away on Friday morning April 4, 2025, at the Appleton Area Health Services-Nursing Home. Visitation will be held on Wednesday, April 9, 2025, from 4:00 pm to 6:00 pm, at the Zniewski Funeral Home-Vaala Chapel in Appleton. Visitation will continue on Thursday, April 10, 2025, from 10:00 am to 11:00 am at The Grace Lutheran Church in Correll, Minnesota, followed by the funeral service at 11:00 am. Burial will be in the Appleton City Cemetery. Zniewski Funeral Home-Vaala Chapel of Appleton is assisting the family with the arrangements.
Virginia Pearl Scheff Jensen was born on December 2, 1931, on a farm north of Correll to Ella Jeanette Dexter Scheff and August Scheff. She was baptized on June 17, 1934, and confirmed in the Episcopal Church in Benson. She attended school in Correll and Benson. She moved to Milbank, South Dakota when she was 18 and worked for 7 years. While living in Milbank, she met and then married Kenneth Jensen on May 3, 1957, when they moved back to Correll and lived until 2022 when she moved to the Appleton Area Health Center. To this union, 6 children were born: Julie, Dawn, Thomas, James, Cynthia and John. During their 57 years of marriage, she was a dedicated farmer’s wife and homemaker.
Virginia was always very active: she was great in the kitchen, an excellent bread maker: making dozens of buns and loaves of fresh bread weekly when the house was full of children, making mints for graduations and weddings and later, teaching her great grandchildren how to make lefsa. She was very creative and had many hobbies: ceramics, sending thousands of cards she had crocheted or created and then letters when the arthritis kicked in and the stamps were too expensive, gardening, canning, crocheting towels, reading, sewing: dresses and doll clothes for her daughters, quilts with the Ladies Aid at Grace Lutheran, lap-robes for veterans, sleeping mats for the homeless, and over 1000 pillow case dresses for the Grain Train orphaned children. She loved to play bingo, cards and board games, attending music jams and her children and grandchildren's sports and activities. Grandma loved to spend time with the littles and read to them, rock them to sleep, or bake them special treats. She kept herself busy and was extremely independent all her life. We will miss her witty sense of humor, her gravelly voice and her constant willingness to learn how to adapt and accept change and loss.
Virginia was preceded in death by her parents, her daughter, Julie, in 1976, siblings: Wilbert, Warren, Donny, Violet (Brekken) and Dorothy (Tweeter), her husband, Kenny in 2015. She is survived by her children: Dawn (Mark) Hartwig, Tom, Jim (Pam), Cindy (Paul) Stock and John (Jodi); Grandchildren: Jacob (Amanda) Hartwig, Jessica (Shane) Sutten, Zachary Jensen, Rachel Jensen, Noah (Hailey) Jensen, Alexis (Ben) Mulder, Olivia Jensen, Becca Wilkening, Graham Stock (Jane Grady), Isaiah Stock, Avery Stock, Tristen Jensen, Kinnly Jensen and Khaleesia Jensen; Great-grandchildren: Zayne, Adley & Jayde Hartwig, Kollin, Makenzie & Harper Sutten, and Sloan Mulder.
